I know it is Apple season, but it seems that Banana Season is 365 days a year. From smoothies, to frozen bananas dipped in chocolate, to banana cake, bread, pie and so much more….we always have a recipe for bananas. Especially the sad brown speckled ones that look at you every morning from your fruit bowl…..screaming please don’t let me die…lol!

So after a wonderful weekend in Philadelphia for a Cousins Wedding where Banana’s Foster seemed to be the go to dessert as well as the wonderful homemade Greek desserts at this amazing event. This was sort of a reunion for all of my cousins were in the same room for the first time is 23 years!

The original recipe called for Peanut Butter, Vanilla Extract and Honey Roasted Peanuts……..I had none of these ingredients, just my sad speckled bananas, almond butter, almond extract and sliced almonds………this is a great bread and easy to make….. here is the recipe!

1 teasp. ground cinnamon

1 teasp. ground nutmeg

1 teasp. baking soda

1/2 teasp. salt

1 cup almond butter

1/2 cup brown sugar

1/2 cup granulated sugar

1 large egg

1 teasp. almond extract

3 very ripe bananas (mashed)

1/3 cup almond butter

3 tablespoons butter

2 tablespoon confectioners sugar

3 tablespoons toasted sliced almonds


Pre-heat oven to 350 degrees, spray a loaf pan with butter flavored Pam. Whisk the flour, cinnamon, nutmeg, baking soda, salt and set aside. Beat the almond butter, brown sugar, sugar on medium speed until smooth. Beat in the egg and the almond extract, then fold in the mashed bananas and mix.

Now add the flour mixture and beat on medium until just combined…it is ok to have lumps. Pour batter in prepared pan and bake for 1 hour and 10 minutes or until the knife comes out clean. If it starts to brown to quickly just tent with a piece of foil.

Remove from heat and use a knife to run around the edges, cool for 20 minutes and then remove from pan and continue to cool on a wire rack. Now make the glaze by combining the almond butter, butter and confectioners sugar in a microwave safe bowl. Microwave on high in 30 second intervals, stirring after each 30 seconds until smooth. Let the glaze sit until it hardens just a bit but is still spreadable. Spread over the top of the bread and then sprinkle with the toasted almonds….wait about 10 minutes before cutting……….
