This is a perfect Salad for Thanksgiving or Christmas because it has a beautiful Red Cranberry Vinaigrette. However, I love it and make it all year round, the red dressing is perfect for a Valentine’s Day Salad or even 4th of July. It has the nutty toasted walnuts, feta, red onion , craisins and pears all balanced out with the tangy  and sweet Cranberry Vinaigrette.

This past Tuesday, November 11, I had the privileged of preparing a “Flavors of Fall Cooking Demonstration” for the St. Demetrios Greek Orthodox Church in Baltimore, MD. I demonstrated how to make several dishes for a wonderful enthusiastic audience of men and women. Everyone sampling the delicious items as I prepared them.

This Salad was a big hit and loved by all, so I thought I would share this recipe with all of you. I know you will just love it, even those that are not big salad lovers loved this one.

Pear, Walnut and Feta Salad with Cranberry Vinaigrette

Serves 12

1 head of boston bibb lettuce

1 10 oz bag of baby arugula

4 T. fresh orange juice

4 cups sliced fresh pears

1 large red onion, need 2 cups sliced thin

2/3 cups crumbled feta cheese

1/2 cup toasted, coarsely chopped walnuts

 1/2 cup dried cranberries

 

Vinaigrette

1 cup canned whole berry cranberry sauce

1/2 cup fresh orange juice, (2 oranges)

2 T. olive oil

4 T. balsamic vinegar

2 tsp. sugar

1 tsp. fresh minced peeled ginger

1/2 tsp salt

For vinaigrette: place all 7 of the ingredients in a blender or cusinart blend until completely emulsified and place in a container

Toss the sliced pears in the 4 T. of orange juice in a bowl. Gently tear the bib lettuce and add arugula to salad bowl. Add the onion, the walnuts, feta, craisins and toss again. Drizzle 1/2 of the dressing over salad and toss, add more if needed or serve on side for those that like it with lots of dressing
