Greek Ten Layer Dip

Ok, everyone loves the Mexican 7 Layer Dip….Refried beans, tomatoes, mexican cheese, sour cream, black olives, jalapeños, green onions….One scoop on a crisp tortilla with all of those flavors is absolute heaven! Always a hit and the “Go-To”  for party dips. Now even more so with Football Season in full swing.

I however have created a Greek twist to this classic 7 layer dip….well maybe a total overhaul is a better description. My version is a combination of all the wonderful flavors and dips that are usually eaten alone and are so popular in Greek Mediterranean Restaurants and staples in many Greek households!

My Greek version is actually 10 Layers, no surprise haha!…. we begin with a wonderful Roasted Red Pepper Hummus which takes the place of re-fried beans, topped with fresh chopped tomatoes, scallions, chopped cucumbers, tsasiki ( garlic-cucumber-greek yogurt), pepperoncini sliced, kalamata olives, fresh dill, arugula and feta cheese. Now all you need to do is grab some Stacy’s Pita Chips or Fresh Pita, cut into wedges and heated for dipping. OK, get ready to be the talk of the party with this delicious dip!

Roasted Red Pepper Hummus

Roasted Red Pepper Hummus Ingredients

2 cans drained chic peas

1/2 cup greek yogurt plain

1/4 tsp. cayenne pepper

1tbsp. greek oregano

2tsp. ground cumin

1 garlic clove

2 tbsp. Lemon juice

2 tbsp. olive oil

Sea Salt and Pepper

1 small jar roasted red peppers ~ drained

Put everything in a food processor except the roasted red peppers. Blend for about 2 minutes until smooth, add all of the drained red peppers and blend until smooth, taste for salt and pepper.

Tsasiki Greek Yogurt cucumber Dip

1 large container greek yogurt plain

2 tbsp. olive oil

2 tbsp. lemon juice

small bunch of fresh dill chopped or 1 tbsp. dry dill

Tsasiki Ingredients

1 or 2 cloves garlic chopped fine

1 cucumber, peeled, grated and squeezed to get juice out of it

sea salt and pepper to taste

Place all ingredients in a bowl and blend well, refrigerate one hour.

Greek Ten Layer Dip

Roasted Red Pepper Hummus

1 pint cherry tomatoes cut in half or vine ripe tomato diced

2 scallions chopped small dice

1 cucumber seeded and peeled and chopped in small dice

Tsasiki enough to cover dish

1 cup sliced pepperocini

Personal Greek 7 Layer Dip

1 cup chopped kalamata olives

1/2 bag fresh Arugula

2 cups cumbled or sliced Feta cheese if putting under the broiler

1 bag Stacy’s pita chips or package fresh pita, cut in triangles and heated in oven

In one tall clear glass bowl, or square clear glass rectangular baking dish. Start with the Hummus and spread over entire dish, then gently add the tomatoes, scallions and cucumbers. Spread a nice layer of Tsasiki next and top with pepperoncini and Kalamata olives. Sprinkle with arugula and feta. If putting under the broiler, slice feta thin and add shredded white cheddar.

Ok, super easy and super delicious…refrigerate for at least and hour and  serve with Stacy’s Pita Chips or fresh heated pita….
