The Classic Greek oven Potatoes found in most Greek Restaurants. One of the absolute favorites of everyone…..not a french fry….not a regular oven roast….different texture and taste……perfect or Christmas and all other Holidays. I actually make them all the time as they are a favorite of my nephews Sean and Bobby as well as my boys Andrew and Jordan!

You can only use russet potatoes…not red potatoes or white potatoes will give you the right texture and flavor of this wonderful roasted potato. The reason…only the russet has a porous texture and easily absorbs the olive oil, lemon and spices. Yet the key to making these potatoes perfect is actually water….yes water…and no you do not boil them first!! Since this potato so porous it absorbs the liquids of lemon juice and olive oil before the potato has time to cook through. This is where the water comes in, you see we need the water to keep the potatoes moist while cooking and what is left once cooked is the wonderful flavor o olive oil, lemon and spices. You will see from the picture of the before and after the amount of liquid that is in the pan……Once you make these you will never stop!

Prep time: 30 min          Bake time: 40-45 min          Servings: 7-10

6 large russet potatoes ( peeled, cut in half lengthwise and cut in half again)

2 cups Lemon juice

Russet Potatoes

1 cup Olive oil

Kosher Salt

Fresh Cracked Black Pepper

4 tbsp. Greek Oregano

4 tbsp.

Granulated Garlic Powder

Place peeled and cut potatoes in a hotel pan, lined up like the picture shows, add enough water to come halfway up the side of the potatoes. Now pour lemon juice all over potatoes and wiggle pan to blend water and lemon juice, be careful not to disturb line up of potatoes. Now drizzle olive oil all over potatoes, sprinkle heavy with kosher salt, then sprinkle with pepper, oregano and granulated garlic.

Carefully place in a 400 degree oven for about 45 minutes until brown and knife inserted in a potato comes out clean. The porous potato will absorbs the water and lemon juice first, then the olive oil and spices cling to these crispy delicious potatoes…….
