Hearty Crab Chili

I had the privilege of appearing on WJZ-TV ABC to talk about my Catering Company Tastefully Gourmet Catering…. It was an amazing experience for me and my crew Helen Karamalakos, Cathie Karas, Wanda Griffin and Anthi Karamalakos. Tim Williams, Ava-joye Burnett and  the TV crew for a wonderful experience. We presented this recipe which is a Twist on the Classic Beef Chili.

It has all the wonderful vegetables of a traditional Chili with Peppers, onions, jalapenos, kidney beans, chili peppers and wonderful spices like cumin, chili powder and oregano. The Twist is that I replaced the ground beef with lump and claw crab meat tossed in butter and sprinkled with Old Bay Seasoning. Try this recipe for something different……

Hearty Crab Chili

1/4 cup olive oil

1 large Vidalia onion chopped

5 cloves garlic chopped

2 tbs. chili powder

2 tsp. cumin

1 tbsp. old bay seasoning

1 pound fresh string beans (cleaned and cut in half)

1 red pepper (seeded and cut large dice)

1 yellow red pepper (seeded and cut large dice)

1 green pepper (seeded and cut large dice)

1 jalepeno pepper ( seeded and chopped)

2 habenero peppers ( seeded and chopped)

2 cans light kidney beans drained

1 small can tomato paste

2  15oz cans fire roasted tomatoes

2 1/2 cups beef stock

1 can Heineken Beer

1 tbsp. worstershire sauce

1 pound claw meat

1 pound lump crab meat

1 1/2 tbsp. Old Bay Seasoning

4 tbsp. butter

Pour Olive Oil in a large stockpot, add the garlic, onion, chili powder and cumin. Saute for about 5 minutes, add the red, yellow and green peppers, stir well and then add the jalepeno and habenero peppers. Add a little more olive oil if dry, stir well and cover, cook on low heat for about 15 minutes until vegetables are tender. Add the kidney beans, the tomato paste, the fire roasted tomatoes, the beer, the beef stock and the worcestershire sauce. Stir well and turn up the heat and bring to a light simmer. Add the claw meat and stir well. Taste for spices in case you like it hotter or milder. At this point you can store until ready to serve. When you are ready to serve, heat soup low simmer and in another pan, melt the butter, add the lump crab meat and the old bay seasoning… gently mix well!

this is hearty and delicious and some spoonfuls will taste like a great hearty chili and then you will get some bites that pop with the old bay crab meat……
