Ok……Everyone loves Spanakopita and everyone loves Brie Cheese. This is what happens when you have a little extra Spinach Pie mixture, a few sheets of phyllo and a wheel of Brie. this is such an amazing combo of  flavors and it is super simple, can be made ahead of time and frozen or if you are making Spanakopita  for a Party or the Holiday and have some leftover spinach mixture and phyllo….this is the ticket!

Remember you must always butter and score the phyllo before it is bakes….once baked, if you try and cut it, you will have flakes of Phyllo everywhere and it will not look pretty!

Recipe:

1 small or large wheel of Brie

2 cups for Small Brie of your Spinach Pie mixture

(recipe in Blog) or 4 cups for a large wheel of Brie

1 stick of melted butter

10 Sheets of Phyllo

Directions: Make your favorite Spanakopita (Spinach Pie) Mixture or use mine that is posted on this Blog. Then you would cut your Brie length wise so you have 2 halves. Butter 4 sheets of  phyllo with melted butter, then place the bottom piece of Brie on top of the buttered phyllo. Top the Brie with half of the spinach mixture. Now place the other half of the Brie on top of the Spinach mixture. Now place the remaining Spinach mixture on top of the second piece of Brie. Make sure that the Spinach mixture is spread evenly to the edges of the Brie.

Now top the Spinach filled Brie with the remaining  6 Phyllo sheets, buttering each sheet. Start molding the Phyllo around the Brie. to outline the shape of the round Brie Wheel. Cut the Phyllo into a Circle around the Brie, leaving 3 inches all the way around. Now start rolling and twisting the edges of the phyllo in towards the Brie Wheel. butter generously and cut slices into the Phyllo. Butter again and at this point you can bake in a 325 degrees until golden brown.

This is such a crowd pleaser and you will be the hit of the party!!!
