Everyone seems to love Chili…especially on these bitter cold days. It’s not just for football season, it has become a year round staple, not just a winter comfort food. There are literally hundreds of recipes that have popped up from all cultures and all seem to be delicious.

With the temperatures in the single digits, hot hearty delicious soups, stews and Chili’s are one of the few things that can help warm us up. That is except a nice shot of warm brandy, haha! Actually I am not kidding because a vivid memory of mine as a child on a cold frigid day is coming in from hours playing in the snow, freezing cold and my mom bundling us up in warm blankets and giving us a shot of apricot brandy! Yep and it was a healthy shot and no doubt it warmed us right up!  Maybe that is why I love apricots so much, haha!

My mom made two soups and they the greek avgolemono soup which we had most Sundays and bean soup which she made on our no meat Fridays to go with our Mrs. Paul’s frozen fish sticks, haha! Mexican was limited to tacos in a box and she never made chili. Years ago there were not many choices, now we have the amazing fusion of cultures and hundreds of variations that adorn our tables today.

White Chicken Chili has certainly become one of the Chili favorites and you will love this recipe because it has some of the red chili flavors with a few twists that make it even more delicious and a bit healthier. The first difference is I use boneless chicken breasts cut in in cubes instead of ground chicken. You can certainly use ground chicken but be very careful and make sure you buy all white meat ground chicken. Sadly some of the ground chicken out there is made with dark meat and other chicken parts that make it contain more fat than lean ground beef.

Traditionally, Chili contains jalapeño chili peppers to give it a kick in addition to chill powder. I only us Habanero peppers in my chilis. If you read my blog post and recipe for my Habanero chili  with Beef you will know why the Habanero pepper has become my favorite.

 First the Habanero has a wonderful citrusy flavor and the heat is strong but secondary to the delicious flavor of this pepper. If you recall,  I was introduced to the Habanero by a special marine and friend that while stationed in Iraq spent time with a fellow Marine  who’s mother lived on the Yucatan peninsula and would not just send  a package of Habanero peppers to remind her son of home, she would send the whole plant. So my Marine Dave, who is Dutch and grew up with food simply spiced with salt and pepper, still prefers cooking with less spice. Only now he loves adding the Habanero that he learned to love in Iraq to almost any dish and I have adapted the habit. I love hot…..the hotter the better, so the wonderful citrus Habanero pepper is the perfect hot spicy fix.

Now, this is generally a healthy soup, but I add Fage Greek yogurt to make it even healthier. I add 2 cups of the Fage non-fat plain yogurt to one can of beans and some of the chicken stock,  then I puree in my cusinart until smooth and creamy. Then it is added to the chili to make it thicker and more flavorful, just makes it a perfect consistency. Of course I am always cooking for a crowd, so the recipe makes a big pot. Jut cut it in half to make a smaller pot that will be just as good!

I love for my White Chicken Chili to look White, so I use yellow and orange peppers, plus all white beans, it turns out beautiful!

 Prep time: 30          Cook time: 30 min      Serves 12-15

3# boneless chicken breast ( cut in small cubes)

3 tbsp. olive oil

1 tsp. paprika

4 tsp. roasted ground cumin ( regular ground is fine)

4 tsp. oregano

1 tsp. ground coriander

2 tbsp. chili powder

2 tsp. pepper

4 tsp. salt

1 tsp. cayenne pepper (optional)

2 large yellow onion (chopped)

4-6 cloves of garlic (chopped)

1 large orange pepper (seeded and chopped)

1 large yellow pepper (seeded and chopped)

2 habanero peppers  (seeded and chopped)

8 cups of chicken stock

1 can of butter beans (drained and rinsed)

4 cans cannellini (white kidney) (drained and rinsed)

1 cans chic peas (drained and rinsed)

2 cups Fage Greek yogurt (o% fat)

1 bag of frozen corn

1 tbsp. lime juice

 Heat 2 tbsp. olive oil on med heat, then in a large soup pot, add the cubed chicken evenly across the bottom of the pan. Do not touch the chicken, cover and cook for 5 minutes. Now turn the chicken scraping across the bottom to turn all the chicken at once. Lower the temp to med-low and sprinkle the chicken with the paprika, cumin, oregano, coriander, chili powder, salt, pepper and cayenne, cover and cook another 5 minutes. Remove lid and toss chicken to incorporate all of the spices. Remove Chicken from pot and set aside, now add the last tbsp. olive oil and add the onion and garlic. Toss well to coat, cover and cook 5 minutes. Then add the yellow and orange peppers and Habanero, cover and cook 5 additional minutes.

 While these are cooking place 2 cans of cannellini beans, the 2 cups of yogurt and 2 cups of chicken stock in the blender or cusinart and blend until smooth. Now add the chicken stock to the pepper and onion mixture and stir well getting everything up from the bottom. Add the bean-yogurt mixture and mix really well.

 Now add the chicken back to pot and the rest of the cans of beans. Stir very well and  taste for spices, add 1 tbsp. lime juice, mix well and bring to a simmer. simmer for 30 minutes and this delicious soup is ready!
